Abstract

水生果蔬汁抗氧化复合饮料及其制备方法,属于食品加工技术领域。本发明以荸荠、芡实、莲子和慈姑四种水生植物为原料,以水为溶剂利用生物酶降解并提取荸荠、芡实、莲子和慈姑中的抗氧化活性物质;再向水提取液中添加白砂糖、柠檬酸、黄原胶和矿泉水,制成色泽淡黄的澄清型的复合饮料,该复合饮料将四种果蔬提取液融为一体,且以价格低廉的荸荠为主要原料,该产品突出了清爽可口的荸荠味,掩盖了芡实、莲子口味不佳的缺点,营养成分含量高,生物活性丰富,具有润肠通便、利尿排淋、清肺化痰和抗氧化等功效,是老少皆宜的极佳饮品。
The invention discloses an aquatic fruit and vegetable juice anti-oxidation composite beverage and a preparation method thereof, and belongs to the technical field of food processing. In the method, four types of aquatic plants, such as water chestnut, gorgon fruit, lotus seed and arrowhead are used as raw materials and water is used as a solvent. The preparation method comprises the following steps: degrading the raw materials by using a biological enzyme and extracting anti-oxidation active substances in the water chestnut, gorgon fruit, lotus seed and arrowhead; and adding white granulated sugar, citric acid, xanthan gum and mineral water into a water extract to prepare a yellowy and clear composite beverage. The composite beverage integrates four types of fruit and vegetable extracts and uses the water chestnut with low price as a main raw material. A product highlights fresh and delicious flavor of the water chestnut, overcomes the defects of poor flavors of the gorgon fruit and lotus seed, has high content of nutrition components, high bioactivity and effects of relaxing bowel, promoting urination, clearing lung and eliminating phlegm, resisting oxidation and the like, and is an excellent beverage which is good for both children and adults.
